Cold Refreshing Berry Hibiscus Iced Tea with Mint

Share with family and friends in the early summer days!

PREP: 10 minutes

INFUSE AND CHILL: 15 minutes to 5 hours or more

For one 1-litre (4 cup) jug or chilled Thermos flask

 COLD INFUSION METHOD

For purists who have time and prefer a more subtly flavoured, refreshing drink

1 Pour the water into a teapot, stir in the honey and add the filter with the Green Mountain tea leaves in. Leave to infuse at room temperature for 5 to 8 hours.

2 Remove the filter and pour the infusion into a jug. Slice the lemon and add to the tea. Chill for at least 2 hours before serving or transferring to a Thermos flask.

HOT INFUSION METHOD

If you’re in a hurry or prefer a drink with a more marked flavour

1 Bring the water to the boil and pour it into a teapot. Add the filter with the Green Mountain leaves. Leave to infuse for 15 minutes.

2 Remove the filter. Slice the lemon, add to the tea with the honey, and stir. To serve frappe (iced), pour the infusion into a jug with lots of ice cubes.

Tip: Play around with this basic recipe by using a plain Rooibos and add pieces of fresh fruit (such as peaches, apricots, mangoes and berries), organic fruit juice (apple, grape or others), spices (cinnamon, aniseed, cloves, cardamom or ginger) and even fresh herbs (mint or basil work well). Enjoy!
